  • ¼ cup cane sugar
  • 1 large egg
  • ½ cup all-purpose flour
  • ½ cup oat flour
  • ¼ teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 pound diced strawberries
  • 2 tablespoons cane sugar (for filling)
  • 1 tablespoon lemon juice
  • 1 ½ cups rolled oats (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease your baking dish with coconut oil.
  2. In a mixing bowl, combine melted coconut oil and cane sugar. Whisk in the egg until smooth, followed by all-purpose flour, oat flour, cinnamon, and salt.
  3. Spread the base mixture evenly in the prepared baking dish using a spatula.
  4. In another bowl, mix diced strawberries with cane sugar and lemon juice until well coated.
  5. Pour the strawberry filling over the base layer evenly.
  6. For the topping, mix oat flour, all-purpose flour, melted coconut oil, cane sugar, salt, and rolled oats until crumbly; sprinkle over the strawberry filling.
  7. Bake for about 45 minutes or until golden brown on top.
  8. Let cool completely in the pan before cutting into bars.
