  • 3 teaspoons cornstarch
  • 1/3 cup water
  • 1/8 teaspoon salt
  • 1/2 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine oats, brown sugar, flour, cinnamon, and melted butter until crumbly. Spread half into a greased 9×9 inch baking pan.
  3. Layer sliced peaches and strawberries over the crust.
  4. In a small saucepan, whisk together the filling ingredients (brown sugar, cornstarch, salt, water) over medium heat until thickened. Stir in vanilla extract.
  5. Pour the syrup evenly over the fruit layer.
  6. Sprinkle the remaining topping mixture over the fruit.
  7. Bake for about 35 minutes until golden brown on top.
  8. For extra crispiness, broil for an additional 2-3 minutes while keeping an eye on it.
