  • 2 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp pure lemon juice or lime juice


Instructions

  1. Preheat your oven to 325°F (160°C) and grease a 9×5-inch loaf pan.
  2. Blend washed strawberries into a smooth puree; set aside some for the glaze.
  3. Cream butter and sugar until light and fluffy, then mix in eggs one at a time.
  4. In a separate bowl, whisk together flour, salt, and baking soda.
  5. Gradually add dry ingredients to the creamed mixture alternately with buttermilk until just combined.
  6. Stir in vanilla extract and strawberry puree; pour batter into the prepared pan.
  7. Bake for about 70 minutes or until a toothpick comes out clean.
  8. Cool before glazing with the mixture of powdered sugar, reserved strawberry puree, vanilla extract, and lemon juice.
