  • 2 cups graham cracker crumbs (or Golden Oreos, crushed)
  • ½ cup unsalted butter, melted
  • 2 tbsp sugar
  • 24 oz cream cheese (softened)
  • 1 cup sugar
  • 1 cup sour cream
  • 3 large eggs (room temperature)
  • 1 tsp vanilla extract
  • 1 box (3 oz) vegan strawberry gelatin
  • 1 cup boiling water
  • ½ cup cold water
  • 1 cup whipped topping
  • 1 cup chopped strawberries
  • 2 cups heavy cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract
  • 20 Golden Oreos (or vanilla cookies), crushed
  • 4 tbsp unsalted butter, melted
  • 1 box (3 oz) vegan strawberry gelatin powder (dry)


Instructions

  1. Preheat oven to 325°F (160°C). For the crust, mix graham cracker crumbs, melted butter, and sugar in a bowl. Press into the bottom of a springform pan and bake for 10 minutes. Allow to cool.
  2. For the filling, beat softened cream cheese and sugar until smooth. Incorporate sour cream and vanilla, then add eggs one at a time. Pour over cooled crust and bake for 45–50 minutes until slightly wobbly in the center. Cool completely on a wire rack before refrigerating for at least 4 hours.
  3. Prepare the strawberry layer by dissolving gelatin in boiling water, then mixing in cold water. Chill until slightly thickened. Fold in whipped topping and chopped strawberries before spreading over the cheesecake. Refrigerate for an additional 2–3 hours.
  4. Serve topped with whipped cream and a crumb mixture made from crushed cookies mixed with melted butter and dry gelatin powder.
