Ingredients

  • 5 ears fresh corn (shucked)
  • 2 medium roma tomatoes (diced)
  • 1 medium English cucumber (diced)
  • 1 medium avocado (diced)
  • 1/2 medium red onion (minced)
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped fresh mint leaves
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons apple cider vinegar
  • 1 tablespoon red apple vinegar
  • Salt and black pepper to taste


Instructions

  1. Bring a large pot of water to boil. Shuck the corn and remove silk.
  2. Boil corn for about 5 minutes, then remove using tongs and let cool. Cut kernels from cobs into a mixing bowl.
  3. Dice tomatoes, cucumber, and avocado; mince red onion.
  4. Add diced vegetables and herbs to the bowl with corn.
  5. In a small bowl, whisk together olive oil, apple cider vinegar, red apple vinegar, salt, and black pepper.
  6. Pour dressing over salad ingredients; toss until well combined.
