Ingredients

  • 1 cup raspberry preserves
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 pound boneless skinless chicken thighs
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon chili powder
  • 1 medium jalapeno pepper, thinly sliced
  • 1 cup fresh raspberries for garnish


Instructions

  1. In a mixing bowl, combine raspberry preserves, olive oil, soy sauce, apple cider vinegar, Dijon mustard, minced garlic, kosher salt, black pepper, and chili powder. Mix well.
  2. Marinate the chicken thighs in half of the marinade for about 10 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Remove the chicken from the marinade (discard used marinade) and season with salt and pepper.
  4. Cook the chicken for about 5–7 minutes on each side until golden brown and cooked through (165°F internal temperature).
  5. Add sliced jalapenos to the skillet during the last few minutes of cooking.
  6. Plate the chicken and drizzle with remaining marinade before garnishing with fresh raspberries.
