  • 5 oz assorted salad greens
  • 2 oranges, peeled and cut into sections
  • 1 apple, thinly sliced
  • 1/4 cup pomegranate arils
  • 1/4 cup sweetened dried cranberries
  • 1/3 cup crumbled feta cheese or plant-based cheese
  • 1/4 cup toasted chopped pecan pieces
  • 3 tbsp fresh orange juice
  • 1 tbsp chicken sparkling grape juice vinegar
  • 1 tbsp dijon mustard
  • 1 tbsp honey
  • 1 tbsp finely minced shallot
  • 1 1/2 tbsp olive oil
  • Salt and black pepper, to taste


Instructions

  1. Wash and drain the assorted salad greens, placing them in a large mixing bowl.
  2. Add the orange sections, thinly sliced apple, pomegranate arils, and dried cranberries to the bowl. Toss gently.
  3. In a separate bowl, whisk together fresh orange juice, chicken sparkling grape juice vinegar, dijon mustard, honey, minced shallot, olive oil, salt, and black pepper until well combined.
  4. Pour the dressing over the salad mixture and toss gently to coat all ingredients evenly.
  5. Before serving, sprinkle crumbled feta cheese and toasted pecan pieces on top.
