  • 1/2 cup mashed sweet potato
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Pecans
  • Cinnamon sugar


Instructions

  1. Prepare the sweet potato by piercing it and microwaving for 5–7 minutes or roasting at 400°F for 45–60 minutes until tender. Mash until smooth.
  2. In a mixing bowl, cream together softened butter, brown sugar, and granulated sugar until fluffy. Add in egg, vanilla extract, and mashed sweet potato; mix well.
  3. In a separate bowl, whisk together flour, cinnamon, nutmeg, ginger, baking soda, and salt.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Scoop tablespoon-sized dough onto parchment-lined baking sheets.
  6. Preheat oven to 350°F and bake for 10–12 minutes until edges are golden but centers remain soft.
  7. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack.
