- 190g graham crackers
- 35g sugar
- 75g melted unsalted butter
- 32 oz full-fat cream cheese
- 325g granulated sugar
- ½ tsp salt
- 1 tsp vanilla essence
- 4 large eggs, room temperature
- 120g heavy cream, room temperature
- 240g sour cream, room temperature
- 1 tbsp cornstarch
- 2-3 tablespoons lemon juice
- 1 lb strawberries, roughly chopped in large chunks
- 55g sugar
- 1 tsp cornstarch
- Juice of 1/2 a lemon
- Fresh strawberries for decoration
Instructions
- Preheat your oven to 350°F (175°C) and prepare the crust by mixing graham crackers, sugar, and melted butter. Press into a springform pan and bake for 10 minutes until golden.
- For the filling, beat room temperature cream cheese until smooth. Gradually add sugar, then mix in salt, vanilla essence, eggs (one at a time), heavy cream, sour cream, and cornstarch until combined. Pour over cooled crust.
- Bake at 325°F (160°C) for 60-75 minutes until set but slightly jiggly in the center. Cool in the oven with the door ajar for an hour.
- For the strawberry compote, cook chopped strawberries with sugar and lemon juice over medium heat until thickened.
