  • 2 lbs ground lean turkey
  • 2 cups sliced carrots
  • 2 cups sliced sweet potatoes
  • 2 cups diced apples
  • 3 cups crushed tomatoes
  • 3 Tbs tomato paste
  • 1-2 cans kidney beans
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp salt (divided)
  • 1/2 tsp pepper
  • 1 1/2 tsp rubbed sage (divided)
  • 1/2 tsp cinnamon
  • A sprinkle nutmeg
  • 1 Tbs olive oil


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Sauté diced apples, sliced sweet potatoes, and sliced carrots along with onion powder, garlic powder, salt, pepper, sage, cinnamon, and nutmeg for about five minutes.
  3. Add ground turkey to the pot and cook until browned.
  4. Stir in tomato paste and spices until well mixed.
  5. Pour in crushed and strained tomatoes; stir to combine.
  6. Simmer on low-medium heat for 20-30 minutes; add kidney beans towards the end.
