Ingredients

  • 1 1/2 cup almond flour
  • 1/4 cup oat flour
  • 1/3 cup melted refined coconut oil
  • 1/4 cup pure maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup berries, fresh or frozen
  • 1 1/2 tbsp pure maple syrup
  • 1 tbsp water
  • 1/2 tsp cornstarch
  • 1/2 cup oat flour
  • 1/4 cup oats
  • 2 tbsp almond flour
  • 1/4 cup melted refined coconut oil
  • 1 tbsp pure maple syrup
  • 1/2 tsp vanilla extract
  • pinch of salt


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. For the base layer, mix almond flour, oat flour, salt, melted coconut oil, and maple syrup until combined. Press into an 8×8 baking dish.
  3. For the berry layer, cook mixed berries with maple syrup and water on low heat until softened. Add cornstarch and simmer until thickened. Let cool.
  4. For the crumble topping, combine oat flour, oats, almond flour, salt, melted coconut oil, and maple syrup until crumbly.
  5. Assemble by spreading the berry layer over the base and topping with crumble mixture.
  6. Bake for about 25 minutes or until golden brown. Allow to cool before cutting into squares.
