  • 3 tablespoons butter
  • 1 yellow onion (diced)
  • 1 large jalapeno pepper (seeded and diced)
  • 4 cloves garlic (minced)
  • 6 cups chicken broth
  • 1/3 cup half and half
  • 2 cans cannellini beans (drained)
  • lbs. bone-in skinless chicken breast
  • 8 oz. cream cheese (softened)


Instructions

  1. Combine all dry seasonings in a small bowl.
  2. Sauté onions and jalapenos in melted butter until softened; add garlic.
  3. Sprinkle flour over vegetables and cook briefly to form a roux.
  4. Gradually stir in chicken broth and half-and-half until smooth.
  5. Blend some beans with broth for extra creaminess, then add back into the pot.
  6. Stir in reserved seasonings, hot sauce, green chilies, corn, and seasoned chicken.
  7. Simmer until chicken is cooked through; shred and mix back into the chili.
  8. Lower heat and incorporate cream cheese until fully melted.
