  • 1 1/2 cups granulated sugar
  • 12 fresh large egg whites (room temperature)
  • 1 1/2 teaspoons cream of tartar
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Whipped cream (for serving)
  • Fresh strawberries, sliced (for serving)


Instructions

  1. Preheat your oven to 325 degrees F and adjust the rack to the lower middle position.
  2. In a mixing bowl, beat egg whites until foamy. Add cream of tartar, vanilla, and almond extracts; continue beating until soft peaks form.
  3. Sift together cake flour, sugar, and salt five times to aerate.
  4. Gradually fold the flour mixture into the egg whites in three parts using a rubber spatula.
  5. Pour the batter into an ungreased tube pan and bake for 40 to 45 minutes or until lightly golden brown.
  6. Cool upside down on a rack for two hours before removing from the pan.
  7. Slice horizontally, layer with whipped cream and strawberries, then serve.
