  • 8 oz cream cheese
  • 2 ½ oz instant banana pudding mix
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ½ cups mashed bananas (about 4 medium)
  • 1 cup granulated sugar
  • ¼ cup vegetable oil
  • 2 large eggs
  • 1 ½ cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp vanilla bean paste
  • 3 tbsp instant banana pudding mix
  • ¼ cup milk
  • 1 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a greased and lined loaf pan.
  2. In a stand mixer, beat cream cheese and pudding mix until smooth. Add the egg and vanilla; fold in chopped vanilla wafers.
  3. In another bowl, combine mashed bananas and sugar. Stir in oil and eggs. Gradually add dry ingredients until just combined.
  4. Layer half of the batter in the pan, spread the pudding mixture on top, then cover with remaining batter.
  5. Bake for 45-55 minutes until golden brown and a toothpick comes out clean. Cool completely before glazing.
