  • 1 lb flank steak, thinly sliced
  • 1 medium white onion, sliced
  • 4 scallions (whites and greens separated)
  • 4 cloves garlic, minced
  • 1 tablespoon soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon vegetable oil
  • 1.5 tablespoons cornstarch
  • 1 tablespoon sugar
  • 2 teaspoons rice vinegar
  • ½ teaspoon baking soda


Instructions

  1. 1. Marinate the beef by mixing soy sauce, cornstarch, rice vinegar, sesame oil, baking soda, and vegetable oil in a bowl. Add beef and let it marinate for 10-15 minutes.
  2. 2. In another bowl, whisk together rice vinegar, soy sauce, cornstarch, black pepper, cold water, and sugar for the sauce.
  3. 3. Heat vegetable oil in a wok or large skillet over medium-high heat. Sear the marinated beef for about 1-2 minutes per side until browned; then remove it from the pan.
  4. 4. In the same pan, stir-fry scallion whites and onions for about 2 minutes until softened. Add minced garlic and cook briefly.
  5. 5. Return beef to the pan along with the prepared sauce. Mix well and cook until thickened for about 1-2 minutes. Add scallion greens last.
  6. 6. Serve immediately over rice or noodles.
