- 4 cups cooked rice (preferably day-old)
- 2 tablespoons vegetable oil
- 2 large eggs, lightly beaten
- 3 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Season sliced beef with salt and pepper. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Sear beef for about 2-3 minutes until browned; remove and set aside.
- In the same skillet, add remaining oil and sauté diced onion for 2-3 minutes. Add minced garlic and mixed vegetables; cook until tender.
- Push veggies to one side; scramble eggs on the other side until fully cooked.
- Add cold rice to the skillet, breaking up clumps; stir to combine with eggs and vegetables.
- Pour in soy sauce and sesame oil; stir-fry for another 3-4 minutes until heated through.
- Return beef to the skillet; mix thoroughly for an additional minute.
- Adjust seasoning if necessary; garnish with green onions before serving hot.
