  • 1 lb thinly sliced beef (flank steak, sirloin, or skirt steak)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (peas, carrots, bell peppers, or corn)
  • 4 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Chopped green onions for garnish


Instructions

  1. Season sliced beef with salt and pepper. In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Sear beef for about 2-3 minutes until browned; remove and set aside.
  2. In the same skillet, add remaining oil and sauté diced onion for 2-3 minutes. Add minced garlic and mixed vegetables; cook until tender.
  3. Push veggies to one side; scramble eggs on the other side until fully cooked.
  4. Add cold rice to the skillet, breaking up clumps; stir to combine with eggs and vegetables.
  5. Pour in soy sauce and sesame oil; stir-fry for another 3-4 minutes until heated through.
  6. Return beef to the skillet; mix thoroughly for an additional minute.
  7. Adjust seasoning if necessary; garnish with green onions before serving hot.
