  • 3 ½ – 4 lb beef shoulder
  • ½ lb turkey bacon
  • 1 large onion
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 can (500 ml) apple juice
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 2-3 sprigs fresh thyme
  • 3 cups chicken broth
  • 1 cup prunes
  • 2 apples
  • 2 tbsp cornstarch


Instructions

  1. Trim excess fat from the beef shoulder and cut into 2-inch chunks. Pat dry.
  2. Cut turkey bacon into strips. Dice the onion and mince the garlic.
  3. Heat olive oil in a large braiser over medium-high heat. Season beef with salt and brown in batches until golden.
  4. Sauté turkey bacon until crispy, then remove from the pan.
  5. Sauté onions until softened, then add garlic and deglaze with apple juice.
  6. Stir in mustards, thyme, browned beef, and chicken broth; bring to a simmer.
  7. After an hour, add prunes and turkey bacon; simmer for another 15 minutes.
  8. Add quartered apples; cook until tender.
  9. Make a cornstarch slurry with some braising liquid to thicken the stew.
