  • About 2 tbsp reduced cider (reserved from above)
  • 1/2 cup granulated sugar (for topping)
  • 1 1/2 tsp ground cinnamon (for topping)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin.
  2. In a bowl, whisk together apple cider, melted butter, sugar, egg, Greek yogurt, and vanilla until smooth.
  3. In another bowl, combine flour, cinnamon, baking soda, baking powder, nutmeg, cloves, and salt.
  4. Gradually mix the dry ingredients into the wet mixture until just combined.
  5. Fill the muffin tin about two-thirds full and bake for approximately 10 minutes or until a toothpick comes out clean.
  6. Cool slightly before brushing with melted butter and rolling in cinnamon sugar.
