Ingredients
- 1 lb. boneless skinless chicken breast
- 6 cups baby spinach
- 1 pint blackberries
- 2 kiwi, sliced
- 1/4 cup sliced red onion
- 1 avocado, sliced
- 3 tablespoons balsamic vinegar
- 3 tablespoons olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dry basil leaves
- 1/8 teaspoon ground black pepper
- 1/4 teaspoon salt
- 1 tablespoon avocado oil
- 1 tablespoon dijon mustard
- 1 teaspoon honey
- salt & pepper to taste
Instructions
- In a small bowl, mix garlic powder, dry basil, black pepper, and salt. Season both sides of the chicken breasts with the spice blend.
- Heat a skillet over medium-high heat and add avocado oil. Sauté the seasoned chicken for 4-6 minutes on each side until golden brown and cooked through. Let rest before slicing.
- In another bowl, whisk together balsamic vinegar, olive oil, dijon mustard, honey, garlic powder, salt, and pepper until thickened.
- In a large serving bowl, layer baby spinach with blackberries, kiwi slices, red onion, avocado slices, and sliced chicken. Serve with balsamic dressing on the side.
