  • 1 lb. Mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 6-8 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning (divided)
  • Salt and pepper to taste


Instructions

  1. Pound chicken breasts to an even thickness. Rub with olive oil and season with blackened seasoning.
  2. Heat a skillet over medium-high heat and add olive oil. Cook the chicken for 3-4 minutes until dark amber on one side. Flip and reduce heat, adding butter and garlic; cook until the internal temperature reaches 165°F.
  3. Let the chicken rest before slicing.
  4. In the same skillet, melt remaining butter and sauté garlic until fragrant. Stir in heavy cream and additional seasoning; simmer until thickened.
  5. Cook pasta according to package instructions, reserving some pasta water before draining.
  6. Combine cooked noodles with the alfredo sauce, adding parmesan cheese until melted. Top with sliced chicken.
