  • 1 cup old-fashioned oats
  • ¾ cup all-purpose flour (or gluten-free flour blend)
  • ⅓ cup light brown sugar
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon (optional)
  • 6 tbsp unsalted butter (or coconut oil), melted
  • 1 tsp vanilla extract
  • 1 cup blueberries (fresh or frozen)
  • ¼ cup granulated sugar
  • 2 tsp cornstarch


Instructions

  1. Preheat oven to 375°F (190°C) and line an 8-inch square baking pan with parchment paper.
  2. In a bowl, mix oats, flour, brown sugar, baking soda, salt, and cinnamon.
  3. Stir in melted butter and vanilla until crumbly.
  4. Press half of the oat mixture into the bottom of the pan.
  5. In a separate bowl, mix blueberries with granulated sugar and cornstarch; spread over oat layer.
  6. Crumble remaining oat mixture on top; press down gently.
  7. Bake for 35-40 minutes until golden brown and bubbly.
  8. Cool completely before cutting into squares.
