  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/3 cup Dutch-process cocoa powder
  • 1 cup all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2/3 cup semi-sweet chocolate chips
  • 2 3/4 cups all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, cold and cubed
  • 3/4 cup light brown sugar, packed
  • 2/3 cup granulated sugar
  • 1 egg, plus 1 egg yolk, room temperature
  • 2 teaspoons vanilla extract
  • 1 cup semi-sweet chocolate chips


Instructions

  1. Preheat your oven to 350°F. Line two large baking sheets with parchment paper and set them aside.
  2. In the bowl of a stand mixer, mix together the unsalted butter and light brown sugar for about 3 minutes until light and fluffy.
  3. Add the large egg and vanilla extract, mixing until well combined.
  4. In another bowl, whisk together all-purpose flour, cocoa powder, baking soda, and salt.
  5. Sift the dry ingredients into the egg and butter mixture. Mix on low speed until everything is incorporated.
  6. Stir in semi-sweet chocolate chips using a spatula. Set this dough aside while you prepare the chocolate chip cookie dough.
  7. In a stand mixer fitted with a paddle attachment, add cold cubed butter, light brown sugar, and granulated sugar.
  8. Mix on low speed, then gradually increase speed to cream together for about 4 minutes until pale and fluffy.
  9. Add one egg followed by an egg yolk one at a time while scraping down the sides between each addition.
  10. Mix in vanilla extract until combined.
  11. In another bowl, whisk together all-purpose flour, cornstarch, baking soda, and salt.
  12. Add this dry mixture to the butter mixture in two additions; mix on low until just combined without overmixing.
  13. Stir in semi-sweet chocolate chips gently with a spatula.
  14. Using a small cookie scoop, scoop both brownie cookie dough and chocolate chip cookie dough into balls—make the latter slightly larger than the former.
  15. Roll each type into uniform balls using your hands; it might help to weigh them for consistency.
  16. Take one brownie ball and one chocolate chip ball, press them together lightly before rolling into one ball again.
  17. Place them on prepared cookie sheets about 2 inches apart.
  18. Bake one sheet at a time in the center of your preheated oven for about 8-9 minutes or until edges are set but tops are still slightly underbaked.
  19. Remove from oven and let cool on sheets for about 5-10 minutes before transferring to wire racks to cool completely.
