- 1/2 teaspoon salt
- 2/3 cup semi-sweet chocolate chips
- 2 3/4 cups all-purpose flour
- 1 teaspoon cornstarch
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup unsalted butter, cold and cubed
- 3/4 cup light brown sugar, packed
- 2/3 cup granulated sugar
- 1 egg, plus 1 egg yolk, room temperature
- 2 teaspoons vanilla extract
- 1 cup semi-sweet chocolate chips
Instructions
- Preheat your oven to 350°F. Line two large baking sheets with parchment paper and set them aside.
- In the bowl of a stand mixer, mix together the unsalted butter and light brown sugar for about 3 minutes until light and fluffy.
- Add the large egg and vanilla extract, mixing until well combined.
- In another bowl, whisk together all-purpose flour, cocoa powder, baking soda, and salt.
- Sift the dry ingredients into the egg and butter mixture. Mix on low speed until everything is incorporated.
- Stir in semi-sweet chocolate chips using a spatula. Set this dough aside while you prepare the chocolate chip cookie dough.
- In a stand mixer fitted with a paddle attachment, add cold cubed butter, light brown sugar, and granulated sugar.
- Mix on low speed, then gradually increase speed to cream together for about 4 minutes until pale and fluffy.
- Add one egg followed by an egg yolk one at a time while scraping down the sides between each addition.
- Mix in vanilla extract until combined.
- In another bowl, whisk together all-purpose flour, cornstarch, baking soda, and salt.
- Add this dry mixture to the butter mixture in two additions; mix on low until just combined without overmixing.
- Stir in semi-sweet chocolate chips gently with a spatula.
- Using a small cookie scoop, scoop both brownie cookie dough and chocolate chip cookie dough into balls—make the latter slightly larger than the former.
- Roll each type into uniform balls using your hands; it might help to weigh them for consistency.
- Take one brownie ball and one chocolate chip ball, press them together lightly before rolling into one ball again.
- Place them on prepared cookie sheets about 2 inches apart.
- Bake one sheet at a time in the center of your preheated oven for about 8-9 minutes or until edges are set but tops are still slightly underbaked.
- Remove from oven and let cool on sheets for about 5-10 minutes before transferring to wire racks to cool completely.
