  • 1/4 cup Cornstarch
  • 1/4 teaspoon Salt (for pudding filling)
  • 1 cup Water
  • 1 cup Heavy Cream
  • 8 ounces Semisweet or Bittersweet Chocolate
  • 4 ounces Unsweetened Chocolate
  • 1 cup Unsalted Butter (for frosting)
  • 4 cups Confectioners Sugar
  • 2 teaspoons Vanilla Extract (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  3. In another bowl, beat together sugar, eggs, buttermilk, butter, and vanilla. Gradually mix in hot coffee until well combined.
  4. Combine the wet and dry ingredients gently until just mixed.
  5. Divide the batter evenly between the prepared pans and bake for 30–35 minutes or until a toothpick inserted comes out clean.
  6. For the filling, heat sugar, cornstarch, salt, and water in a saucepan until thickened; mix in heavy cream.
  7. Melt semisweet and unsweetened chocolate for frosting; beat softened butter and gradually add sugar and melted chocolate.
  8. Once cooled, layer the cakes with pudding filling in between and frost the top and sides with frosting.
