Ingredients

  • 1 ½ cups granulated sugar
  • ½ cup water
  • ¼ teaspoon kosher salt
  • ¾ cup heavy cream
  • 1 tablespoon cold unsalted butter
  • 6 medium apples (washed, sliced)
  • 6 oz. dark chocolate chips
  • 1 tablespoon oil
  • ½ cup chopped nuts (optional)


Instructions

  1. Wash and slice the apples into wedges.
  2. In a heavy-bottomed saucepan, combine sugar, water, and salt; heat until sugar dissolves without stirring.
  3. Boil until it reaches a golden color (8-10 minutes) and reaches about 240°F (115°C) using a candy thermometer.
  4. Carefully add heavy cream while stirring; it may bubble.
  5. Remove from heat and stir in cold butter until smooth.
  6. Dip each apple slice into the warm caramel sauce and coat thoroughly.
  7. Place coated slices on parchment-lined baking sheets and sprinkle with chopped nuts if desired.
  8. For optional chocolate drizzle, melt dark chocolate chips with oil and drizzle over caramel-coated apple slices before they set.
