  • 2 cups white rice
  • 1 large onion
  • 2 cups low-sodium chicken broth
  • 2 cans cream of mushroom soup
  • 4 large chicken thighs
  • Fresh thyme
  • Garlic


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9″x13″ baking dish with olive oil.
  2. In a large mixing bowl, combine rinsed rice, chopped onion, chicken broth, and cream of mushroom soup. Season with salt and pepper to taste.
  3. Place chicken thighs skin-side up into the rice mixture and brush with melted butter. Sprinkle thyme and minced garlic on top; season again.
  4. Cover with foil and bake for 1 hour. Remove foil and continue baking for another 30 minutes until chicken is golden brown and rice is tender.
  5. Let sit before serving; garnish with chopped parsley.
