- 2 cups white rice
- 1 large onion
- 2 cups low-sodium chicken broth
- 2 cans cream of mushroom soup
- 4 large chicken thighs
- Fresh thyme
- Garlic
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9″x13″ baking dish with olive oil.
- In a large mixing bowl, combine rinsed rice, chopped onion, chicken broth, and cream of mushroom soup. Season with salt and pepper to taste.
- Place chicken thighs skin-side up into the rice mixture and brush with melted butter. Sprinkle thyme and minced garlic on top; season again.
- Cover with foil and bake for 1 hour. Remove foil and continue baking for another 30 minutes until chicken is golden brown and rice is tender.
- Let sit before serving; garnish with chopped parsley.
