  • 12 oz pasta (fettuccine, penne, or your choice)
  • 2 tablespoons olive oil
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • ½ cup chicken broth
  • ½ cup Marsala apple vinegar (or additional chicken broth)
  • 1 cup heavy cream
  • ½ cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • Fresh parsley for garnish


Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a skillet over medium heat, add olive oil and season the chicken with salt and pepper. Cook until golden brown on all sides (about 5-7 minutes).
  3. Add sliced mushrooms to the skillet; sauté until tender (4-5 minutes). Stir in minced garlic and cook for an additional minute.
  4. Pour in chicken broth and Marsala apple vinegar; let simmer for about 3 minutes. Stir in heavy cream and Parmesan cheese until well combined.
  5. Add cooked pasta to the skillet and toss gently until evenly coated in the sauce. Sprinkle dried thyme over the top.
  6. Serve hot, garnished with fresh parsley.
