  • 3 very ripe bananas
  • 2 large handfuls baby spinach
  • 3 tablespoons milk (almond or regular)
  • 1 egg
  • ½ cup sugar
  • 1 teaspoon vanilla extract
  • ½ cup Greek yogurt (full fat)
  • 3 tablespoons oil
  • 1 cup white whole wheat flour
  • 1 teaspoon baking soda
  • ⅔ cup cocoa powder
  • ¼ teaspoon sea salt
  • ½ cup dark chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Blend the milk, bananas, and spinach in a high-powered blender until mostly smooth.
  3. In a large bowl, mix the blended mixture with the egg, sugar, vanilla, oil, and Greek yogurt until well combined.
  4. In a separate bowl, whisk together the flour, baking soda, cocoa powder, and sea salt. Gradually add to the wet ingredients and mix gently. Fold in dark chocolate chips.
  5. Line a muffin pan with liners and fill each about ¾ full with batter. Sprinkle extra chocolate chips on top if desired.
  6. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  7. Cool briefly in the pan before transferring to a wire rack.
