  • 1 cup rolled oats
  • 1/2 cup applesauce or 1 small grated apple
  • 1 large egg
  • 1/2 tsp cinnamon
  • 1 tbsp honey or maple syrup (optional)
  • 1/2 tsp baking powder
  • Pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin pan or line it with mini muffin liners.
  2. In a mixing bowl, combine cottage cheese, rolled oats, applesauce (or grated apple), egg, cinnamon, honey (or maple syrup), baking powder, and salt. Mix until well combined.
  3. Allow the batter to rest for 5 minutes to let the oats absorb moisture.

  5. Bake for 18–20 minutes until set and lightly golden on top.
