Ingredients

Scale
  • 1 cup natural creamy almond butter
  • ⅓ cup pure maple syrup
  • ½ cup vanilla protein powder
  • 2 teaspoons vanilla extract
  • ½ cup rolled oats
  • 1 teaspoon salt
  • 1 ½ teaspoons cinnamon
  • ½ cup white chocolate chips

Instructions

  1. In a mixing bowl, combine almond butter, maple syrup, vanilla protein powder, vanilla extract, rolled oats, salt, and cinnamon. Mix until a thick batter forms.
  2. Line a baking sheet with wax paper. Use a mini cookie scoop to drop balls of batter onto the sheet and roll each ball smooth with your hands.
  3. Melt white chocolate chips with coconut oil in a microwave-safe bowl in 10-15 second increments, stirring frequently until smooth.
  4. Drizzle melted white chocolate over the energy bites and refrigerate for 1 hour or until firm.
  5. Store in an airtight container in the refrigerator for up to 1 week or freeze for up to 3 months.
