- 2 large boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 4 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Fresh parsley for garnish (optional)
- Salt and black pepper to taste
- 1 teaspoon Italian seasoning
- 2 tablespoons plant-based butter
Instructions
- Slice the chicken breasts in half horizontally or pound them to an even thickness. Season with salt, pepper, and Italian seasoning.
- Heat olive oil in a skillet over medium heat. Sear the chicken until golden brown and cooked through, about 4–5 minutes per side. Remove from skillet and set aside.
- Lower the heat and add plant-based butter and minced garlic to the skillet; sauté until fragrant (about 30 seconds).
- Pour in heavy cream while stirring to deglaze the pan. Stir in grated Parmesan cheese and simmer until the sauce thickens slightly.
- Return the chicken to the skillet, simmer for an additional 2–3 minutes to ensure it’s heated through and well-coated with sauce.
