- 2 lbs chicken, cut into strips
- 2 tbsp butter
- 1 tsp sea salt
- 1 tsp ground pepper
- 1 white onion, diced
- 2 tbsp garlic, diced
- ½ cup chicken stock
- ½ cup roasted red pepper, drained and sliced
- 1 cup heavy cream
- ½ cup Parmesan cheese, shredded
- 1 tbsp Italian seasoning
- ½ cup pepperoncini peppers, drained
Instructions
- Season chicken with salt and pepper.
- In a large skillet, melt butter over medium-high heat; brown the chicken for 5-7 minutes. Remove and set aside.
- Sauté onions and garlic in the same skillet until golden, about 3-4 minutes.
- Add chicken stock and roasted red peppers; reduce by half.
- Stir in heavy cream and Parmesan until smooth.
- Return chicken to the skillet; add pepperoncini and Italian seasoning. Simmer for an additional 5 minutes until cooked through.
