Ingredients

  • 2 lbs chicken, cut into strips
  • 2 tbsp butter
  • 1 tsp sea salt
  • 1 tsp ground pepper
  • 1 white onion, diced
  • 2 tbsp garlic, diced
  • ½ cup chicken stock
  • ½ cup roasted red pepper, drained and sliced
  • 1 cup heavy cream
  • ½ cup Parmesan cheese, shredded
  • 1 tbsp Italian seasoning
  • ½ cup pepperoncini peppers, drained


Instructions

  1. Season chicken with salt and pepper.
  2. In a large skillet, melt butter over medium-high heat; brown the chicken for 5-7 minutes. Remove and set aside.
  3. Sauté onions and garlic in the same skillet until golden, about 3-4 minutes.
  4. Add chicken stock and roasted red peppers; reduce by half.
  5. Stir in heavy cream and Parmesan until smooth.
  6. Return chicken to the skillet; add pepperoncini and Italian seasoning. Simmer for an additional 5 minutes until cooked through.
