Ingredients
- 2 tablespoons olive oil
- 3/4 pound dried fettuccine
- 5 cloves garlic (minced)
- 1/2 cup julienned sun-dried tomatoes
- 14.5 ounces petite diced tomatoes (drained)
- 1 tablespoon tomato paste
- 2 tablespoons granulated sugar
- 1/2 cup plain Greek yogurt
- 1/4 cup sour cream
- Salt and pepper (to taste)
- ½ cup grated parmesan cheese
- 1 1/2 cups baby spinach
- 1 cup reserved pasta water
Instructions
- 1. Bring a large stockpot of water to boil. Add 1 tablespoon olive oil and cook fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
- 2. In a mixing bowl, combine Greek yogurt and sour cream; set aside.
- 3. In a large skillet over medium-high heat, add remaining olive oil. Sauté minced garlic and sun-dried tomatoes for about 2 minutes until fragrant.
- 4. Reduce heat to medium-low; stir in drained diced tomatoes, tomato paste, and sugar until well mixed.
- 5. Gradually whisk in the yogurt-sour cream mixture. Increase heat to medium-high and simmer for 5–7 minutes until thickened.
- 6. Season with salt and pepper; add parmesan cheese and spinach until wilted.
- 7. Toss cooked fettuccine in the sauce, adding reserved pasta water as needed for desired consistency.
- 8. Serve warm with optional crushed red pepper flakes.
