Ingredients

  • 2 tablespoons olive oil
  • 3/4 pound dried fettuccine
  • 5 cloves garlic (minced)
  • 1/2 cup julienned sun-dried tomatoes
  • 14.5 ounces petite diced tomatoes (drained)
  • 1 tablespoon tomato paste
  • 2 tablespoons granulated sugar
  • 1/2 cup plain Greek yogurt
  • 1/4 cup sour cream
  • Salt and pepper (to taste)
  • ½ cup grated parmesan cheese
  • 1 1/2 cups baby spinach
  • 1 cup reserved pasta water


Instructions

  1. 1. Bring a large stockpot of water to boil. Add 1 tablespoon olive oil and cook fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water before draining.
  2. 2. In a mixing bowl, combine Greek yogurt and sour cream; set aside.
  3. 3. In a large skillet over medium-high heat, add remaining olive oil. Sauté minced garlic and sun-dried tomatoes for about 2 minutes until fragrant.
  4. 4. Reduce heat to medium-low; stir in drained diced tomatoes, tomato paste, and sugar until well mixed.
  5. 5. Gradually whisk in the yogurt-sour cream mixture. Increase heat to medium-high and simmer for 5–7 minutes until thickened.
  6. 6. Season with salt and pepper; add parmesan cheese and spinach until wilted.
  7. 7. Toss cooked fettuccine in the sauce, adding reserved pasta water as needed for desired consistency.
  8. 8. Serve warm with optional crushed red pepper flakes.
