  • ¾ cup Dutch processed cocoa powder
  • 2 large eggs (room temperature)
  • 1 ½ cups semisweet chocolate chips
  • ½ cup hot water
  • 1 cup sour cream (room temperature)
  • ⅓ cup granulated sugar


Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift almond flour and cocoa powder together in a bowl.
  3. In another bowl, beat egg whites until soft peaks form, then gradually add sugar until stiff peaks are achieved.
  4. Gently fold the dry ingredients into the egg whites until just combined.
  5. Pipe small circles onto prepared baking sheets and allow them to rest for 30 minutes before baking for 15–18 minutes.
  6. For the filling, melt chocolate chips over simmering water, stirring in hot water until smooth. Allow to cool slightly before mixing with sour cream and sugar.
  7. Once macarons have cooled, pair similar-sized shells and pipe the filling between them.
