Instructions
- In a mixing bowl, combine flour, sugar, salt, and yeast. Melt 0.25 cup unsalted butter and mix it with cold milk into the dry ingredients to form a soft dough. Knead until smooth.
- Shape the dough into a ball, wrap it in plastic wrap, and chill for about 30 minutes.
- Spread softened butter on a floured surface into a rectangle; chill until firm.
- Roll out the chilled dough into a rectangle large enough to encase the butter layer completely; fold over sides to seal in the butter.
- Roll out again into a larger rectangle and fold it into thirds like a letter; chill for at least one hour.
