  • 1 cup Dr. Pepper soda
  • 2 sticks (226g) unsalted butter, room temperature
  • ¼ cup cocoa powder
  • ½ cup boiling water
  • ½ cup buttermilk
  • 3 large eggs, room temperature
  • 2 cups all-purpose flour
  • 1½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1½ teaspoons vanilla extract
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • ½ teaspoon all spice
  • 4 cups Dr. Pepper soda for frosting
  • 1½ cups (339g) butter for frosting
  • 1 teaspoon ground ginger for frosting
  • 2½ cups (312g) confectioners’ sugar for frosting
  • 1 teaspoon vanilla for frosting


Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking pan generously with butter or cooking spray.
  2. In a small bowl, combine the chopped prunes and dried cherries. Set aside to let them soften as you prepare the batter.
  3. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Then stir in vanilla extract.
  4. In another bowl, mix together all-purpose flour, cocoa powder, baking soda, nutmeg, ginger, and all spice until evenly combined.
  5. Gradually add the dry mixture into the wet mixture while alternating with buttermilk and boiling water. Mix until smooth. Finally, fold in the fruit mixture along with 1 cup of Dr. Pepper soda.
  6. Pour the batter into your prepared baking pan. Bake in preheated oven for about 34 minutes or until a toothpick inserted into the center comes out clean.
  7. While the cake cools, prepare your frosting by beating together softened butter with confectioners’ sugar until creamy. Gradually mix in ground ginger and remaining Dr. Pepper soda until you achieve a smooth consistency.
  8. Once the cake has cooled completely on a cooling rack, frost generously with your prepared frosting. Slice into squares and enjoy!
