Ingredients
- 10.5 cups water or organic unsalted veggie broth
- 1 yellow onion
- 2 celery ribs
- 3 carrots
- 4 garlic cloves
- Salt (to taste)
- 1 cup pastina (or small pasta shape)
- Grated Parmigiano cheese (for garnish)
Instructions
- In a large pot, combine water or broth, onion, celery, carrots, garlic, and salt. Bring to a boil.
- Reduce heat to medium-low, semi-cover the pot, and simmer for about 45 minutes until vegetables are tender.
- Use a slotted spoon to transfer the veggies to a blender with two ladles of broth. Blend until smooth.
- Return the blended mixture to the pot and stir well.
- In a separate small pot, cook pastina according to package instructions until al dente.
