Ingredients

  • 500g (1.1lb) fresh or frozen strawberries
  • 100g (1/2 cup) granulated sugar
  • 1 tablespoon lemon or lime juice
  • Pinch of salt


Instructions

  1. Prepare the strawberries by removing the leafy tops and chopping them into pieces.
  2. In a medium saucepan over low heat, combine chopped strawberries, sugar, lemon juice, and salt. Stir gently to mix.
  3. Cook on low heat until juices release; stir regularly until simmering.
  4. Increase heat to low-medium and cook for about 15 minutes while stirring often. Use a potato masher to achieve the desired texture.
  5. Continue cooking until the mixture thickens and strawberries break down completely.
  6. Remove from heat and allow to cool at room temperature before transferring to storage.
