  • 1 lb boneless, skinless chicken breasts
  • 2 cups instant rice (white or brown)
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 1 can water (using the empty soup can for measurement)
  • 1 envelope onion soup mix
  • Optional: 1 cup shredded cheddar cheese
  • Optional: 1–2 cups frozen mixed vegetables


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch casserole dish.
  2. In a large bowl, mix together the cream of chicken soup, cream of mushroom soup, water, and instant rice until well combined.
  3. Pour the mixture into the greased casserole dish and spread evenly.
  4. If desired, stir in frozen vegetables or shredded cheese for added flavor and nutrition.
  5. Place raw chicken breasts on top of the rice mixture and sprinkle with onion soup mix.
  6. Cover tightly with aluminum foil and bake for 60 minutes without removing the foil.
  7. After baking, ensure chicken is cooked through (internal temperature should reach 165°F/75°C) and rice is tender.
  8. For a golden finish, broil uncovered for an additional 3–5 minutes if desired.
  9. Let rest for 5–10 minutes before serving.
