  • 95 g plain (all-purpose) flour
  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 225 g dark chocolate, chopped
  • 56 g butter
  • 2 eggs
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips


Instructions

  1. Preheat your oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional ovens. Line a baking tray with parchment paper.
  2. In a heatproof bowl over simmering water, melt together the dark chocolate and butter until combined. Stir in vanilla extract.
  3. In another bowl, whisk together eggs and both sugars until light and fluffy.
  4. Sift in flour, cocoa powder, baking powder, and fold in chocolate chips.
  5. Gently combine the melted chocolate mixture with the egg mixture without overmixing.
  6. Spoon batter onto the prepared baking tray, spacing evenly. Bake for 12-14 minutes until set but still soft in the center.
  7. Allow browkies to cool on the tray for about 10 minutes before transferring them to a cooling rack.
