- 1 cup diced tomatoes
- ½ cucumber, sliced
- ½ cup hummus
Instructions
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine chickpeas with olive oil, garlic, oregano, thyme, salt, and pepper. Toss until well-coated.
- Spread chickpeas on a baking sheet in a single layer and roast for 25-30 minutes until golden brown and crispy.
- Lay each tortilla flat. Spread about 2 tablespoons of hummus on each one.
- Top with mixed greens, diced tomatoes, sliced cucumber, and roasted chickpeas.
- Roll up tightly to form wraps; cut in half if desired.
