Ingredients
- 1 ½ pounds boneless, skinless chicken thighs
- 3 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- 3 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon smoked paprika
- Salt and freshly ground black pepper, to taste
- 1 cup Greek yogurt
- ½ cucumber, grated and squeezed dry
- 1 tablespoon fresh dill, chopped
- 1 tablespoon fresh lemon juice
- 2 cups cooked basmati or jasmine rice (or quinoa)
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 1 cup cucumber, diced
- ½ cup Kalamata olives, pitted and halved
- Fresh parsley or mint leaves, for garnish
Instructions
- Prepare the marinade by whisking olive oil, lemon juice, minced garlic, oregano, smoked paprika, salt, and pepper in a bowl.
- Add chicken pieces to the marinade; toss to coat and refrigerate for at least 30 minutes.
- While marinating, make tzatziki by mixing Greek yogurt with grated cucumber (squeezed dry), minced garlic, dill, lemon juice, olive oil, salt, and pepper.
