  • 1 teaspoon ground cinnamon
  • 2 cups finely grated carrots
  • 1 cup crushed pineapple, drained
  • ½ cup chopped walnuts (optional)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a large mixing bowl, whisk together vegetable oil, granulated sugar, brown sugar, eggs, and vanilla until well combined.
  3. In another bowl, combine all-purpose flour, baking soda, baking powder, salt, and ground cinnamon.
  4. Gradually add the dry mixture to the wet mixture and stir until just combined.
  5. Gently fold in grated carrots and drained crushed pineapple. Add walnuts if desired.
  6. Pour the batter into the prepared pan and bake for 30 minutes or until a toothpick comes out clean.
