  • 1 Chilli Flakes
  • 1 Cooked Butter Beans
  • 1 Chopped Tomatoes
  • 1000 Vegetable Stock
  • 125 White Apple Vinegar
  • 150 Pasta
  • 25 Basil
  • 50 Spinach
  • Nutritional Yeast (to serve)
  • Olive Oil
  • Salt
  • Black Pepper


Instructions

  1. Begin by finely dicing the red onion, carrot, celery, potato, and mincing the garlic.
  2. Heat olive oil in a large saucepan over medium heat and sauté the diced vegetables with salt until softened (about 5–10 minutes).
  3. Stir in tomato purée, oregano, paprika, and chili flakes; cook for an additional 2–3 minutes.
  4. Add apple vinegar followed by butter beans, chopped tomatoes, and vegetable stock; season to taste and bring to a boil.
  5. Reduce heat to simmer for 10–15 minutes before adding pasta according to package instructions.
  6. Once the pasta is nearly al dente, stir in spinach and fresh basil until wilted.
  7. Serve hot with garnishes of fresh basil, olive oil drizzle, and nutritional yeast if desired.
