- 2 teaspoons instant yeast
- 1 tablespoon granulated sugar
- 1 teaspoon salt
- 2 tablespoons unsalted butter (room temperature)
- 3 cups all-purpose flour
- 1/2 cup unsalted butter (chilled, for layers)
- 1 whole egg (for wash)
- 2 tablespoons milk (for wash)
Instructions
- Activate the yeast by mixing warmed milk, yeast, and sugar; let it froth for 5-10 minutes.
- In a large bowl, whisk flour and salt. Add the yeast mixture and room temperature butter; mix until a rough dough forms.
- Knead the dough on a floured surface for 5-7 minutes until smooth; place in a greased bowl and let rise covered for about 1 hour.
- Prepare the butter layer by pounding chilled butter into a rectangle between parchment sheets; refrigerate.
- Roll out risen dough into a rectangle; place chilled butter in the center, fold dough over it, seal edges, roll out again, and fold into thirds. Chill between folds.
- Roll out to ¼ inch thick; cut into triangles and roll them up tightly from base to tip.
- Proof for another hour covered with plastic wrap.
