  • ⅔ cup all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon kosher salt
  • ¾ cup unsalted butter (room temperature)
  • 1 cup granulated sugar
  • 1 teaspoon vanilla paste or extract
  • 1 teaspoon almond extract
  • 3 large eggs (room temperature and whisked)
  • 1 cup finely ground almond flour
  • ⅓ cup sliced almonds
  • ⅓ cup honey
  • ⅓ cup water


Instructions

  1. Preheat your oven to 375℉ and grease an 8-inch cake pan lined with parchment paper.
  2. In a small bowl, whisk together all-purpose flour, baking powder, and salt.
  3. In a stand mixer or using a hand mixer, cream unsalted butter and granulated sugar on medium speed until fluffy (about 2 minutes).
  4. Add vanilla and almond extracts followed by whisked eggs, mixing until incorporated.
  5. Gradually incorporate dry ingredients until nearly combined; then fold in almond flour by hand.
  6. Transfer batter to the prepared pan and sprinkle sliced almonds on top.
  7. Bake for 28-35 minutes until edges pull away from the pan and a toothpick comes out with moist crumbs.
  8. While baking, prepare honey simple syrup by heating honey and water in a saucepan until combined.
  9. Once baked, pour syrup over warm cake and let cool for 20 minutes before removing from the pan.
