Ingredients

  • 2 tsp sea salt, divided
  • 1 tsp fresh cracked pepper, divided
  • 1 tsp oregano, divided
  • 1 tsp garlic powder
  • 1/2 tsp paprika, divided
  • 8 oz turkey strips
  • 2 Tbsp extra virgin olive oil
  • 6 chicken thighs
  • 1 large shallot
  • 3 cloves garlic, grated or pressed
  • 1 cup chicken broth
  • 1 stick of butter
  • 1/2 cup honey
  • 4 sprigs fresh thyme
  • 2 large peaches, sliced
  • Fresh basil and additional fresh thyme for topping


Instructions

  1. Preheat your oven to 350°F.
  2. Season chicken thighs with half of your sea salt, pepper, oregano, paprika on one side and repeat on the other side.
  3. Cook turkey strips in a skillet over medium heat for about 3 minutes until they turn dark red; remove from pan.
  4. Add 1 tablespoon of olive oil in the same skillet and sear seasoned chicken thighs for about 1-2 minutes per side.
  5. Remove chicken and add an additional 2 tablespoons of olive oil, then stir in chopped shallots and cook for about 2 minutes.
  6. Add grated garlic and cook another two minutes until fragrant.
  7. Pour in chicken broth, scrape up brown bits, and simmer for about three minutes.
  8. Add butter and honey to the broth, stirring until the butter melts; return chicken thighs to skillet with thyme sprigs.
  9. Cover skillet and bake for about 15 minutes.
  10. After baking, remove from oven and add sliced peaches over chicken, spooning sauce over both before broiling for about 3-5 minutes until peaches soften.
