- 2 tsp sea salt, divided
- 1 tsp fresh cracked pepper, divided
- 1 tsp oregano, divided
- 1 tsp garlic powder
- 1/2 tsp paprika, divided
- 8 oz turkey strips
- 2 Tbsp extra virgin olive oil
- 6 chicken thighs
- 1 large shallot
- 3 cloves garlic, grated or pressed
- 1 cup chicken broth
- 1 stick of butter
- 1/2 cup honey
- 4 sprigs fresh thyme
- 2 large peaches, sliced
- Fresh basil and additional fresh thyme for topping
Instructions
- Preheat your oven to 350°F.
- Season chicken thighs with half of your sea salt, pepper, oregano, paprika on one side and repeat on the other side.
- Cook turkey strips in a skillet over medium heat for about 3 minutes until they turn dark red; remove from pan.
- Add 1 tablespoon of olive oil in the same skillet and sear seasoned chicken thighs for about 1-2 minutes per side.
- Remove chicken and add an additional 2 tablespoons of olive oil, then stir in chopped shallots and cook for about 2 minutes.
- Add grated garlic and cook another two minutes until fragrant.
- Pour in chicken broth, scrape up brown bits, and simmer for about three minutes.
- Add butter and honey to the broth, stirring until the butter melts; return chicken thighs to skillet with thyme sprigs.
- Cover skillet and bake for about 15 minutes.
- After baking, remove from oven and add sliced peaches over chicken, spooning sauce over both before broiling for about 3-5 minutes until peaches soften.
