- 1 lb boneless, skinless chicken breasts
- 2 tbsp olive oil
- 3 cloves garlic, minced

- Salt & freshly cracked black pepper to taste
- ¼ cup hot honey
- 1 tbsp fresh lemon juice
- 2 medium Yukon Gold potatoes, cut into 1-inch cubes
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1 tsp dried rosemary
- 2 tbsp butter
- 2 large shallots, thinly sliced
- 8 oz cremini mushrooms, sliced
- ¼ cup fresh basil leaves
- Pinch of red pepper flakes
- 1 ½ cups heavy cream
- ¾ cup grated Parmesan cheese
- 1 large shallot, thinly sliced into rings
- ¼ cup all-purpose flour
- Pinch of salt
- ½ cup vegetable oil for frying
Instructions
- Preheat oven to 400°F (200°C). Toss potato cubes with olive oil, garlic, rosemary, salt, and pepper. Roast for 25-30 minutes until golden brown.
- In a skillet, heat olive oil and sauté chicken seasoned with garlic, oregano, paprika, salt, and pepper until cooked through.
- Stir in hot honey and lemon juice in the same skillet; simmer for 1-2 minutes before adding chicken back to coat.
- For the creamy sauce, melt butter in another skillet, caramelize shallots and mushrooms, then add garlic and stir in heavy cream until thickened.
- Assemble by placing roasted potatoes on plates topped with hot honey chicken and creamy sauce.
