  • 1 lb boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp dried oregano
  • ½ tsp smoked paprika
  • Salt & freshly cracked black pepper to taste
  • ¼ cup hot honey
  • 1 tbsp fresh lemon juice
  • 2 medium Yukon Gold potatoes, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried rosemary
  • 2 tbsp butter
  • 2 large shallots, thinly sliced
  • 8 oz cremini mushrooms, sliced
  • ¼ cup fresh basil leaves
  • Pinch of red pepper flakes
  • 1 ½ cups heavy cream
  • ¾ cup grated Parmesan cheese
  • 1 large shallot, thinly sliced into rings
  • ¼ cup all-purpose flour
  • Pinch of salt
  • ½ cup vegetable oil for frying


Instructions

  1. Preheat oven to 400°F (200°C). Toss potato cubes with olive oil, garlic, rosemary, salt, and pepper. Roast for 25-30 minutes until golden brown.
  2. In a skillet, heat olive oil and sauté chicken seasoned with garlic, oregano, paprika, salt, and pepper until cooked through.
  3. Stir in hot honey and lemon juice in the same skillet; simmer for 1-2 minutes before adding chicken back to coat.
  4. For the creamy sauce, melt butter in another skillet, caramelize shallots and mushrooms, then add garlic and stir in heavy cream until thickened.
  5. Assemble by placing roasted potatoes on plates topped with hot honey chicken and creamy sauce.
