  • 56 pieces boneless chicken breast or 68 pieces boneless chicken thighs
  • 1/3 cup soy sauce
  • 1/4 cup + 2 tbsp brown sugar
  • 2 garlic cloves, minced
  • 1 tbsp fresh ginger, minced
  • 67 wooden skewers (soaked in water)


Instructions

  1. Soak wooden skewers in water for 10–20 minutes.
  2. In a mixing bowl, combine soy sauce, brown sugar, minced garlic, minced ginger, and a splash of water or apple vinegar until the sugar dissolves.
  3. Cut chicken into 1–2 inch chunks and marinate in half of the mixture for at least 10 minutes.
  4. In a saucepan, heat the remaining marinade until it thickens slightly.
  5. Thread marinated chicken onto soaked skewers and grill on medium-high heat for about 8–12 minutes, frequently basting with thickened sauce until fully cooked.
