  • 1/3 cup lemon juice

  • 2 tablespoons lemon zest
  • 2 teaspoons vanilla extract
  • 4 large eggs
  • 2 cups blueberries
  • 1/2 cup unsalted butter
  • 8 oz brick-style cream cheese
  • 1 teaspoon lemon juice
  • 3 – 4 cups powdered sugar
  • 3/4 cup unsalted butter
  • 12 ounces brick-style cream cheese
  • 1 1/2 teaspoons lemon juice
  • 4 1/2 – 5 1/2 cups powdered sugar


Instructions

  1. Preheat your oven to 350°F (180°C) and grease a 9×13 inch cake pan.
  2. In a bowl, sift together flour, baking powder, baking soda, and salt; set aside.
  3. Mix buttermilk and lemon juice in another bowl; set aside.
  4. Cream softened butter and sugar until fluffy, then add eggs one at a time along with vanilla extract.
  5. Alternately mix in dry ingredients and wet ingredients until just combined; fold in blueberries gently coated in flour.
  6. Pour batter into prepared pan(s) and bake for about 30-35 minutes or until a toothpick comes out clean.
  7. Allow cooling before frosting.
