  • 4 boneless skinless chicken breasts
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 ½ cups panko breadcrumbs
  • 4 slices cooked chicken or turkey breast
  • 4-8 slices Swiss cheese
  • Olive oil or vegetable oil


Instructions

  1. Preheat oven to 375°F (190°C) if baking.
  2. Pound each chicken breast between plastic wrap until about ½ inch thick.
  3. Set up three shallow bowls: one with seasoned flour, one with beaten eggs, and one with panko breadcrumbs mixed with optional spices.
  4. Coat each chicken breast in flour, dip in egg, then fully cover with breadcrumbs.
  5. Heat oil in a frying pan over medium heat and fry chicken until golden brown on both sides (about 4 minutes per side) or bake on a greased sheet for 20–25 minutes.
  6. Top each piece of chicken with turkey and Swiss cheese; return to heat briefly until cheese melts.
  7. Serve hot with your choice of sides.
